An omelette with blueberry jam and a strong coffee is my favourite food for Saturday breakfast. Today I asked J to share his recipe, which he says is pretty much fool proof.  Best enjoyed in pyjamas listening to this play list.

What you need:

  • 3 medium eggs
  • 1.5 spoons of plain flour
  • 1 teaspoon of sugar
  • a pinch of salt
  • 2 spoons of milk (or 1 spoon of single cream + 1 spoon of milk)
  • a little spoon of olive oil 


  1. Whip the eggs using a hand held whisk (don't use an electric mixer as it will over-beat the eggs) with flour, sugar, milk and salt. Continue whisking to aerate the mixture. Don't overdo it, you want to combine the ingredients without big bubbles forming. 
  2. Pour a drop of olive oil on to a hot frying pan and add your mixture slowly
  3. Cover and leave until the top layer is no longer runny
  4. Flip the omelette (using a big wooden spatula) and cook for another 1-2 minutes.
Serve immediately with blubbery jam.
